Scalloped potatoes are a great way to dress up the humble potato and feed hungry mouths! This basic recipe gives you so much room to change it up and create mouth watering comfort food.

  1. Slice onions in half and cut into thin strips. Melt butter in sauté pan and toast caraway seeds. Add the onion and cook over low until translucent and golden. Set aside
  2. Wash potatoes and slice up into 1/8 inch thick slices.
  3. Line a 9×13 pan with a layer of potatoes. Sprinkle flour over top of potatoes. Evenly sprinkle 1/3 of onions on top of flour. Add 1/3 of cheese. Drizzle heavy cream on top of the layer. Repeat for a total of 3 layers.
  4. Cover with aluminum foil and place in 350 degree oven. Bake for 50 minutes. Check with a fork in the center. Once potatoes are cooked, remove and add another sprinkling of cheddar cheese on top. Place in oven just until melted and golden. Remove and let set for 10 minutes before serving.
