Dinner as planned, or is it?
Ever had the perfect dinner plan set up only to not be able to make it? Yeah, me neither… Ha ha, who are we kidding? It happens more often then we care to admit, or at least it does to me. So what happens when things don’t go as planned and you don’t feel like running to the store? You scrounge and create, that’s what.
Preparing for the unplanned
I had this grand idea of roasted chicken and scalloped potatoes planned for dinner. I turn the oven on, grab a roasting pan, dig through the herbs, and get my chicken out. I’ve greased the pan an prepped the herbs and now I am ready to season the chicken. I pull it out of the bag… wait a minute, does something smell off? Can’t be, this has only been in the fridge since the 3rd. Oh…. It’s been there for a whole week now. I take another sniff. Yup, I am not risking it. As heartbreaking as it was, the chicken went into the trash. I hate waste and spending money to throw something into the trash.
I don’t want to run into town to pick stuff up for dinner so I start scrounging to see what we have. I found a package of beef sausage that I planned to make when it was just the boy and I. We’ve got some bell peppers and zucchini that really need to be used. Of course we always have potatoes and onions on hand. This is where I reach an ah ha moment!
Let’s get cooking
Let’s grab 1 yellow onion and 2 potatoes. Now give them a rough chop, bite size for the potatoes and a bit smaller for the onion but definitely not a fine dice. Time to toss them in the pan with some olive oil, shake on some salt and pepper and let the pan work it’s magic. I love the flavor of caramelized onions and crispy potatoes! Now on to prepping the other ingredients, I chop the bell pepper, zucchini, and sausage into one inch pieces.
When the potatoes are just about fork tender, I toss the remaining ingredients in and let everything finish cooking. My goal is to still have a little crunch to my zucchini and bell peppers, I don’t want them to cook to mush. I was going to add some fresh rosemary but mother nature has been giving us fits of rain today and I decided it was too much to brave the mosquitos and potential downpour to go out and get some. However, I think it would have been a fantastic addition to this dish.
So there ya have it!
Dinner crisis averted! Trip to the store was averted. Mosquito Gods did not get their sacrifice today. I still managed to get something not only edible but pretty darn good and somewhat healthy (check out all those veggies! ) to the table before Papa Bear made it home. The boy has been tasked with dessert; he’s currently whipping up some brownies. Come to think of it, we have some ice cream in the freezer, some chocolate sauce, some walnuts… I cannot wait for the brownies to come out now!
